Adstock is a municipality in the Les Appalaches Regional County Municipality in the Chaudière-Appalaches region of Quebec, Canada.
Its population in the Canada 2016 Census was 2,806. Adstock was created on February 14, 2001, after the amalgamation of Saint-Méthode-de-Frontenac and Sacré-Coeur-de-Marie-Partie-Sud. On October 24, 2001, Sainte-Anne-du-Lac joined the new municipality. Adstock was named after the township in which the former municipality of Saint-Méthode-de-Frontenac lies. The township was itself named after the village of Adstock in Buckinghamshire, England.
The township of Adstock was erected in 1869 within the county of Buckingham, which dated back to 1829. The parish of Saint-Méthode-d'Adstock was erected in 1888. It took the name of Saint-Méthode-de-Frontenac in 1945.
The municipality of Saint-Méthode-de-Frontenac comprised two sectors: Saint-Méthode and Saint-Daniel. In 1910, parts of the territories of the canton of Thetford-Partie-Nord and the canton of Thetford-Partie-Sud were detached to give birth to the municipality of the parish of Sacré-Coeur-de-Marie. Part of the territory of Sacré-Coeur-de-Marie separated in 1949 to give birth to the municipality of Sainte-Anne-du-Lac.
